How to make old long beans

Green beans are a type of vegetable that is rich in vitamins and trace elements. Summer is the harvest season for green beans, but if they are not picked when they are ripe, they will become old beans in a few days, with hard stems and leaves, and a poor taste when eaten. Before cooking green beans, you must remove the stems and leaves of the old beans and blanch them in boiling water. This will soften the beans, and then stir-fry them with pork, mutton, beef, etc., which will be more delicious.

Ingredients

1 catties of old long beans

3 liang flour

6 cloves of garlic

Salt and sesame oil as needed

Methods/Steps

Break off the head, tail and worm-eyed parts of the long beans, rinse them clean, soak them in water for 10 minutes, rub them, take them out and drain them.

Wash the long beans and cut them into 2.5 cm pieces. Then place it in a small pot.

Put 3 taels of flour directly into the bowl (about 2 spoons), then pick up the bowl with your hand and shake it to let the flour stick evenly on the beans.

Then, stir it evenly with chopsticks, place the beans covered with flour on the grate of the steamer (add half a pot of water to the steamer in advance, and put a steamer cloth on the grate), turn on the heat, and steam for 15 minutes.

Turn off the heat. Pour the steamed beans into a small bowl, then use chopsticks to loosen the beans that are stuck together, add appropriate amount of salt and sesame oil, and stir evenly.

Peel the garlic cloves, wash them, and mash them into garlic paste. After the steamed beans have cooled, put the garlic paste in a bowl, stir evenly, and it is ready to eat.

Precautions

Before putting the beans on the grate, put the cage cloth on first, and then put the beans dipped in flour.

When adding salt, you should put it in after the beans are out of the steamer while they are hot so that it can be dissolved evenly. When adding mashed garlic, wait until the beans are slightly cool before adding it so that the pungent sour smell will not be produced.

【Method 1】Potatoes stewed with beans

Ingredients: pork, beans, ginger, pepper, cooking wine, dark soy sauce

Method: 1. Cut the pork butt into pieces and blanch;

2. Remove the old tendons and heads and tails of the beans, peel the potatoes and cut into dice, cut the green onions into sections and slice the ginger; 3. After the oil in the pan is hot, add the green onions, ginger, peppercorns and star anise and stir-fry until fragrant, then add the meat and stir-fry evenly, then add the cooking wine.

4. Add potatoes and beans and stir-fry evenly;

5. Add dark soy sauce and salt to adjust the color and seasoning, add appropriate amount of clear soup to cover the meat and vegetables, bring to a boil over high heat, and continue to simmer over low heat for about 30 minutes.

【Method 2】Stir-fried beans and sausages

Seasoning: cooking oil, salt, chicken essence

2. Steam the sausage and slice it diagonally

3. Put the beans in boiling water (the beans are light in nature, so sprinkle some salt in the water)

4. Drain the beans and fry them with the sausages in a hot oil pan.

5. When the beans are cooked, add salt and chicken essence to taste. (Eating half-cooked beans will cause poisoning, so it is recommended to stir-fry them for a while.)
