How to stew dried shrimps with winter melon?

In life, many people like to drink winter melon soup, so how to stew winter melon with dried shrimps?

Dried Shrimp and Winter Melon is a delicious traditional specialty dish belonging to Zhejiang cuisine. The main ingredients are winter melon, dried shrimp, and shallots. This dish has rich juice and fresh taste, and the melon is tender and smooth. Cooking dried shrimps and winter melon together, the dried shrimps can give the winter melon a delicious taste, while the winter melon can bring a light and refreshing taste to the dried shrimps.

The method of making dried shrimp and winter melon is relatively simple. In order to satisfy friends with different tastes, I will introduce three different methods of this dish as follows:

Method 1

Appropriate amounts of winter melon, dried shrimps, shallots, ginger, starch, cooking oil, salt, cooking wine, and chicken essence. Peel the winter melon, remove the naan, wash and cut into slices, marinate with a little salt for about 10 minutes, drain and set aside, soak the dried shrimp in warm water; wash and mince the scallion and ginger; put oil in a pot, heat it to 60%, pour in the winter melon slices, and when the winter melon skin turns green, remove and drain the oil; leave some oil in the pot, heat it, sauté the scallion and ginger, add appropriate amount of water, chicken essence, cooking wine, salt and dried shrimp, add the winter melon slices after boiling, then boil over high heat, then simmer over low heat. When the winter melon is cooked and flavored, add starch to thicken and stir well.

Method 2

500 grams of winter melon, 50 grams of dried shrimp, 1 teaspoon of Shaoxing wine, 1 teaspoon of water starch, 1 teaspoon each of chopped green onion and chopped ginger, and appropriate amounts of salt and chicken powder. Peel the winter melon, remove the pulp and seeds, wash and cut into slices, marinate with a little salt for about 10 minutes, drain and set aside; soak the dried shrimps in warm water until soft. Place the wok on high heat, add oil and heat until it is 60% hot, pour in the winter melon slices, and when the winter melon skin turns emerald green, remove from the pan, drain the oil and set aside. Leave a little oil in the wok, heat it up, sauté chopped scallion and ginger, add half a cup of water, chicken powder, Shaoxing wine, salt and dried shrimps, bring to a boil, add winter melon slices, bring to a boil over high heat, then simmer over low heat. When the winter melon is cooked through and flavored, add starch to thicken, stir well and serve.

Method 3

Peel the winter melon, remove the flesh, wash and cut into slices 5 cm long, 3 cm wide and 1 cm thick. Marinate with a little salt for about 10 minutes, drain and set aside. Place the wok on high heat, add oil and heat until it is 60% hot, then add the winter melon slices. When the winter melon slices turn green, remove from the pan and drain the oil. Stir-fry chopped green onion and minced ginger in an oil pan, add cooking wine, add winter melon slices and dried shrimps and stir-fry, add salt and MSG and salt to taste, thicken with water starch, and sprinkle with coriander leaves.

Reminder: Don’t cut the winter melon slices too thin, otherwise the taste will be bad. Winter melon oil can make it taste better. .Dried shrimps are already a very fresh ingredient, so there is no need to add chicken essence to this dish.
