How to make crispy dinner rolls

In a busy life, it is a great happiness to be able to have a delicious meal when you return home. If you don’t have much time to prepare dinner, you can choose simple ingredients, stir-fry them briefly and they are ready to go. It’s that easy to make crispy dinner rolls.

2. Let’s make the soup base first. Add 20g of high flour to 100g of milk and mix well.

3. Heat over low heat, stirring until the batter becomes dry and lines appear, then remove from heat.

4. Cover or put it with damp cloth to cool naturally and the soup stock is ready. (It is better to prepare the soup stock the night before and refrigerate it overnight.)

5. Pour 85g milk, 1 egg, 20g corn oil and 90g soup stock into the bread bucket.

6. Add 240g high flour, 35g sugar and 2g salt and place them diagonally. Dig a hole with 4g yeast and place it in the middle.

7. Start the bread machine and knead the dough for 30 minutes until it is fully kneaded, then you can pull out a thin film.

8. Roll the dough into a ball and place it directly in the bread bucket for the first fermentation, which takes about 50 minutes.

9. Ferment until it is twice as large as the original size. If you put your finger dipped in water and it does not shrink, the fermentation is complete.

10. Knead the fermented dough for a few minutes to release the air, divide it into 9 equal parts, cover with plastic wrap and relax for 15 minutes.

11. Grease the baking tray, roll the relaxed dough into a ball and place it on the baking tray.

12. Put it in the oven and put a bowl of hot water underneath to maintain the required temperature and humidity for fermentation. Cover the oven door and let rise for a second time, about 45 minutes. No need to turn on the oven fermentation function.

13. Use the fermentation time to make crispy grains. Prepare the ingredients: 50g low flour, 25g butter, and 25g white sugar.

14. Soften the butter at room temperature and add sugar. (25g of white sugar is just the right amount of sweetness, if you don’t like sweetness you can reduce it to 20g)

15. Stir well.

17. After mixing well, pinch it into small pieces with your hands, or chop it up with a fork, and the crispy grains are ready.

18. Prepare the whole egg liquid.

19. Take out the bread that has doubled in size and preheat the oven to 180 degrees. Brush a layer of egg wash on the surface of the dough.

20. Sprinkle with crispy grains.

21. Bake in the preheated oven at 180 degrees for 20 minutes.

22. Out of the oven. Let it cool slightly before eating. The homemade crispy grains are very filling!
