(The 6th kneading program of the Petrus PE8200ug I use is 15 minutes. The kneading time of each bread machine is different. For example, the kneading program of the Petrus PE8020 I gave to my mother is 20 minutes)

9.1 Now we take a piece of dough and check the condition of the dough. Slowly stretch the dough with your hands. The dough can be pulled apart, but it is not easy to stretch it very thin. If it is stretched a little thin, cracks will appear, and the edges of the cracks will be rough. At this time, you can add butter.

10.2 As shown on the LCD screen, the 15-minute dough kneading process ends. (If you use a 20-minute dough kneading program on other bread machines, you can check the dough for gluten formation at 15-20 minutes.)

11. Add softened butter

12. Select the 6-kneading program again. After 4 minutes of kneading, you can see that the butter has begun to be absorbed.

13. After 15 minutes, the kneading process is completed and the dough is smooth and elastic. (The program is still 15 minutes, some bread machines are 20 minutes)

14. Take a piece of dough and stretch it slowly. At this time, the dough can be pulled apart to form a tough film. When you poke it with your fingers, the edges of the hole will be smooth. At this time, the dough has reached the complete stage and can be used to make toast.

15. Add dried cranberries, select the dough kneading program, mix well and then turn off the machine.

16. Cover with plastic wrap and divide into 2 equal parts, and relax for 10 minutes

17. Take a portion of dough, divide it into 3 equal parts, and roll it into long strips

19. Roll into a hydrangea shape and put it into the bread machine. Cover the bread bucket with plastic wrap and select 9 for fermentation, as shown on the LCD screen. My machine has a separate fermentation program, which lasts for 2 hours. The bread machine automatically controls the fermentation temperature. We don't need to worry about anything. Let's check again in 2 hours.

20. After 2 hours of fermentation, the dough ferments to 2-2.5 times its original size. Brush a layer of egg wash on the surface. (You don’t have to brush it. I just happened to have extra egg liquid, so I used it. I used local eggs, so the surface is more yellow when baked.)

21. Select the baking function. My bread maker can set the baking time. I set the time to 30 minutes. After 30 minutes, take out the bread pan and demould it. Remember to wear heat-insulating gloves, otherwise you will be burned.
