How to make spicy chicken with potatoes

1. Cut the green onion into sections, the ginger into slices, the garlic into slices, but leave the dried chilies uncut.

2. Peel the potatoes, cut them into pieces, wash off the starch, and soak them in water.

3. Wash the green peppers and cut into slices.

4. Cut the chicken into pieces and put it into cold water. After the water boils, skim off the blood foam and cook for about three minutes.

5. After the chicken pieces are cooked, remove them and drain the water.

6. Chop the Pixian bean paste and set aside.

7. Pour more oil into the pot, add the peppercorns when the oil is hot and fry until fragrant.

8. Add onion, ginger, garlic and dried chili and stir-fry until fragrant.

9. Add chopped Pixian bean paste and stir-fry until red oil comes out.

10. After the oil turns red, add the chicken pieces and stir-fry until colored.

11. Pour an appropriate amount of white wine along the edge of the pot.

12. Pour in an appropriate amount of light soy sauce.

13. Finally, pour in a little braised soy sauce and stir-fry until fragrant.

14. Add rock sugar and stir-fry.

15. Add an appropriate amount of boiling water, just enough to cover the chicken pieces. After the water boils, reduce the heat to low, cover the pot and simmer for half an hour.

16. After half an hour, when the soup has reduced by one third, add potatoes, turn on high heat, add appropriate amount of salt and chicken essence, cover the pot and continue simmering.

17. Cook until one third of the soup is left and it becomes thick, then add the green pepper and stir-fry. Cook for another two or three minutes until the pepper is cooked and then you can serve.

18. Remove from the pan and place on a plate. Sprinkle with a little chopped green onion and you can eat.
