How to make salty crispy biscuits

4. Take 350g of flour, add the fermented yeast water to the flour several times, knead into a smooth dough, and ferment for more than 2 hours.

5. While the dough is fermenting, prepare the salty oil pastry. Heat the wok and pour in sesame oil. Add 150g of flour, salt, five-spice powder, and pepper powder in turn. Stir-fry until cooked and set aside.

6. Press a hole in the fermented dough and it will not bounce back. The area around the hole is very smooth.

7. Fully exhaust the fermented dough and knead it into five portions into smooth dough.

8. Take a dough, roll it into a rectangle, spread the pastry evenly, leaving one corner unspread.

9. Cut three times on each of the two long sides. Fold up the piece that is not coated with oil first, and then fold the opposite side over. Start from right to left, then right to left.

10. Fold into a square
