They can be found on the table for entertaining guests during festivals and holidays, and are also specialties that wanderers take away from home. They contain various pickled vegetables: radishes, sword beans, leeks, green beans, peppers, sweet and sour radishes, etc. The sour, crispy and refreshing taste can make people drool just thinking about it.

Most families have some jars of different sizes placed in order. This jar is brown, with a big belly and a small mouth, and is filled with sour water. This kind of sour water is actually made by cooling salt water. People usually put some seasonal vegetables in this sour water. The jars are filled with delicious jar dishes, which have a long history. After thousands of years of oral transmission and innovation, jar dishes have developed into a local specialty with unique flavor and diverse varieties.

Generally, the vegetables that can be made into jar dishes in summer include peppers, beans, eggplants, cucumbers, lentils, etc. In winter, there are radish, cabbage, mustard greens, fermented tofu, Laba beans, etc. These jar dishes are really delicious when eaten with rice after they are made. There are many ways to make pickled vegetables using just a radish. Radish leaves can be used to make pickled vegetables, and radish strips can be cut into spicy radish strips. Radish peels can be used to make kimchi, etc.

Wash and dry it, rub it vigorously in a larger container, sprinkle salt according to the amount during the rubbing process, and after the radish is out of water and rolled up tightly, mix it evenly with chopped chili and put it into the jar. The jar used for pickled vegetables needs to be turned upside down after being cleaned to drain the water. There cannot be a drop of raw water in it. After installing the lid on the jar, inject clean water into the edge of the jar to block the circulation of air and prevent the growth of bacteria. After a month of fermentation, the delicious pickled vegetables in the jar are ready to be eaten.
