How to make amaranth shrimp wontons

1. Ingredients: appropriate amount of wonton wrapper, 500 grams of meat filling, 205 grams of shrimp, 150 grams of (wild) amaranth, light soy sauce, cooking wine, onion, ginger, salt, homemade shrimp skin MSG, cooking oil, and appropriate amount of sesame oil.

2. Pick and wash the amaranth.

3. Chop the green onion and ginger into small pieces.

4. Add chopped green onion, ginger, cooking wine, cooking oil, salt, dried shrimps and MSG to the meat filling and mix well.

5. Soak the amaranth in boiling water, remove it from the pot and immerse it in cold water to drain.

6. Peel the shrimps, remove the shrimp threads and peel them into kernels. Marinate with cooking wine for 10 minutes and chop the amaranth.

7. Add amaranth and sesame oil to the meat and mix well.

8. Take the wonton wrapper and wrap the filling in it. Take another shrimp and place it on the meat filling.

9. Fold and seal.

10. Stew the wrapped wontons.

11. Put the wrapped wontons into boiling water and cook.

12. Add appropriate amount of light soy sauce and chopped coriander to a bowl, spoon the cooked wonton stew into the bowl and mix well.

13. The cooked wonton has a thin skin and large fillings, and the color of the shrimp is very tempting.
