Material

250g sour cowpea, 100g minced meat, 10 dried chilies, 1 small piece of ginger, 4 tablespoons vegetable oil, 1 tablespoon cooking wine (15ml), 1/4 teaspoon white pepper (1g), 2 tablespoons light soy sauce (30ml), 1/2 teaspoon dark soy sauce (3ml), 1/2 teaspoon sugar (3g), 1/4 teaspoon sesame oil (1ml)

1. Soak the sour beans in clean water for 20 minutes, wash them, squeeze them dry and cut them into small pieces

2. Put the minced meat into a bowl, add cooking wine, dark soy sauce, vegetable oil and white pepper powder, mix well and marinate for 5 minutes. Peel and chop the ginger, and cut the dried chili into small pieces

3. Pour oil into the pot, heat it over high heat. When the oil is 70% hot, add the meat filling and stir-fry quickly until the meat changes color and becomes cooked. Remove from the pan

4. Pour some more oil into the pot, heat it over high heat until the oil is 40% hot, add the minced ginger and chili segments, stir-fry until fragrant, then add the sour beans, turn to medium-low heat, and stir-fry for at least 3 minutes

5. Add the fried minced meat, soy sauce, and sugar, stir fry evenly and continue to fry for 2 minutes, then drizzle with sesame oil.
