1. Wash the bitter melon and cut it into pieces of 1 cm wide and 2 cm long; wash the duck ears and cut them into pieces

2. Heat oil in a pan, add sugar, and wait for the sugar to dissolve.

3. When the sugar is completely dissolved and there are small bubbles in the pot, add the duck pieces and stir-fry.

4. Add pickled peppers, bean paste, and Sichuan peppercorns to the pot, and stir-fry until the water is almost dry and the remaining oil is basically oil (this process takes about 10 minutes). This process is very important. It will taste better if it is fried dry.

5. Add appropriate amount of water (do not cover the duck pieces, otherwise it will be too much), then pour in the bitter melon strips

6. Cover the pot, bring to a boil over high heat, then reduce to medium-low heat and simmer. Turn the pot over several times during the simmering process. It takes about 40 minutes. I didn't keep track of the time. I just watched the duck meat cook until it was done and then added some salt (not too much, because the bean paste itself is quite salty).
