How to make sweet and sour potatoes

1. Soak the potatoes in water, wash away impurities, and drain.

2. Peel the garlic and ginger, wash them, and slice the ginger; wash the green onions and peppers, and smash the green onions for later use.

3. Heat a little oil in the pan, add the small potatoes and stir-fry briefly, then set aside.

4. Take another pot, add tomato sauce, scallions, ginger, garlic, dried chilies, 1 cup of water and peppercorns, and cook over medium heat.

5. When the soup is reduced to 2/3 of the original, turn off the heat and filter into a bowl for later use.

6. Pour the sauce from step 5 into the pot and add the small potatoes from step 3.

7. Pour the remaining 2 cups of water into the pot in step 6, bring to a boil over high heat and then continue to cook over low heat.

8. Take a piece of tin foil, cut a small cross in the middle, and cover the surface of the small potatoes. After the small potatoes are fully flavored, remove the tin foil, continue to cook for a while until soft, then turn off the heat, serve, and finally sprinkle with white sesame seeds and chopped coriander.
