How to make sweet and sour eggplant strips

1.1 Cut into strips of about 1CM, mix with dry starch (corn flour) and set aside.

2.2 You must use green-skinned eggplant. One eggplant is enough for two people.

3. Prepare the sweet and sour sauce, according to the amount for two people, 3 spoons of Shanxi aged vinegar and 2 spoons of white sugar. 4. Widen the wok and heat the oil until it is 70% to 80% hot, then add the eggplant strips and fry until golden brown.

5. Then add the sweet and sour sauce to another pot. When the sweet and sour sauce starts to bubble, add the eggplant strips and stir-fry quickly (experienced cooks can stir twice before serving, and novices should not stir for more than 5 seconds). Eat while hot!!!
