Sweet and Sour Pork Tenderloin: Rinse the pork tenderloin, cut it into long strips, put it in a bowl, mix it with eggs, pepper, salt, egg white and ginger slices and marinate for 10 minutes. Evenly coat the marinated tenderloin with a layer of dry starch. Pour cooking oil into a wok and heat it to 50% hot. Put the tenderloin in and fry until it turns light yellow. Leave some oil in the wok, add tomato sauce, water, sugar, white vinegar, thicken with wet starch and cook until the sauce becomes thick. Pour the sauce over the fried tenderloin in the dish. 5. Tofu with tomato sauce: Cut the Japanese tofu into small pieces. Coat the tofu with flour. Fry in oil until the crust becomes hard and golden. Remove from oil and set aside. Pour some oil into the pan, add tomato sauce when the oil is hot, stir-fry then pour in appropriate amount of water and bring to a boil. Add sugar and Japanese tofu.
