Saury is a fish with a very distinctive appearance. Generally speaking, it can be often seen in the archipelago area. Because its meat is very delicious, it is recognized by many diners. If you buy saury in an inland city, it is usually frozen in the supermarket, so you still need to thaw it before eating it at home. So, what are the common methods of cooking frozen saury?

The cooking method of frozen saury is actually not much different from that of fresh saury. Frozen saury must be thawed before being used in cooking, and the steps after that are the same as those for fresh saury. Specifically, the thawed frozen saury can be prepared as follows.

Method 1:

Ingredients: saury, chicken soup, ginger, oil, abalone juice, soy sauce, cooking wine, sugar

Production steps:

1. Wash the saury, cut off the head and tail, and then cut open the belly to remove the spine, leaving the back of the fish still connected;

2. Cut the ginger into shreds and set aside;

3. Put the saury in a bowl, add 1 tablespoon of soy sauce, 1 tablespoon of cooking wine, 1/2 tablespoon of sugar and a little shredded ginger, mix well, and let the saury soak in it for 20 minutes;

4. Pour 5 tablespoons of oil into the pan and heat it up. Pour the saury and marinade into the pan, turn to low heat and fry for 5 minutes. Stir the saury from time to time to prevent it from sticking to the pan.

5. Pour half a bowl of clear chicken soup and 2 tablespoons of abalone juice into the pot, cover and simmer over medium heat for 5 minutes, then turn to high heat to reduce the soup.

Method 2:

Ingredients: salad oil, salt, cooking wine, ginger powder

Production steps:

1. Wash the saury first and dry it with kitchen paper;

2. Apply cooking wine, salt and ginger powder on the fish and set it aside to marinate for 1 hour;

3. Put the frying pan into the oven, adjust the oven temperature to 180℃, and preheat for 5 minutes;

4. Put the marinated fish into the frying pan, brush a layer of salad oil on the fish, and adjust the time to 15 minutes.

5. During the frying process, you need to brush salad oil on the fish 2-3 times and turn the fish over.
