Peach gum sago coconut milk recipe

Main ingredients: 40g peach gum, 20g tapioca pearls, 1 box of coconut milk. Accessories: some yellow rock sugar, some water, 20g coix seed.

1. Soak peach gum overnight.

2. Pour two bowls of water into the cooking pot, add the tapioca pearls after boiling, turn off the heat after boiling over high heat, cover with a lid and simmer for 7-8 minutes.

3. Prepare another cooking pot and pour in clean water, peach gum and coix seeds.

4. Bring to a boil over high heat and add appropriate amount of rock sugar.

5. Bring peach gum and coix seed to a boil, then simmer over low heat for 15-20 minutes.

6. When cooking peach gum, you can take out the tapioca pearls and you can see a little white core in the middle of the tapioca pearls.

7. Then pour the tapioca pearls into the pot and boil them together with the peach gum and coix seeds.

8. After boiling, turn to low heat, slowly pour in a box of coconut milk and stir. Turn off the heat after boiling.

Cooking tips: When cooking tapioca pearls, wait until the water boils before putting them in. Then turn off the heat and cover the lid and simmer for a few minutes. When you see only a little white core of the tapioca pearls, you can pour them out. The tapioca pearls cooked with peach gum will be completely transparent, have a chewy texture, and will not melt easily. If you don’t have coix seed, you can add some red dates, lotus seeds, lily, etc. It is best to use coconut milk, which has a stronger flavor.
