How to make Mei's braised pork

1. Cut the tofu in the middle. Slice the ginger, dice the garlic, and cut the onion into sections.

2. Slice the pork belly, preferably with skin and meat, fat and lean meat included in each slice. Since it needs to be braised, it is best to choose a wok with a lid. Dice the chili pepper.

3. Heat the pan over high heat and rub the bottom of the pan with ginger slices first to prevent it from sticking. After the pan is hot, pour in oil, add garlic and sauté until fragrant, then add the remaining ginger slices and stir-fry until fragrant, then add chili peppers and stir-fry until spicy.

4. Add the meat slices and stir-fry continuously. Stir-fry until it changes color, add sugar and stir-fry evenly, then pour in cooking wine, and then pour in soy sauce and dark soy sauce. Add all the liquid gradually, don't pour it directly on the meat, as this will make it too tough.

5. Keep stir-frying to color evenly, then adjust the taste (just taste it and decide whether to add sugar or salt) to your favorite taste, continue stir-frying for 2 minutes, cover with lid and simmer.

6. Simmer for 5-10 minutes until the soup is half dry, add the scallion segments and stir-fry vigorously to reduce the juice. Finish! It's so soft! ! !
