Ingredients: 200g duck blood, 50g vermicelli, 4 soaked tofu, 2 teaspoons (10g) chopped coriander, 50g duck intestines, 1 teaspoon (5g) chopped green onions, 5g shredded ginger, 1 teaspoon (5g) salt, 1/2 teaspoon (3g) white pepper, 1/2 teaspoon (2ml) white vinegar. Method: 1. Rinse the duck blood and duck intestines repeatedly with clean water, cut the duck blood into 1.5cm cubes and the duck intestines into 2cm long sections. 2. Put the duck intestines into boiling water and blanch them, then take them out. Boil the vermicelli in warm water until soft and set aside. 3. Add 500ml of cold water to the cooking pot, bring to a boil over high heat, then add the chopped duck intestines and shredded ginger. Bring to a boil again, then add the softened vermicelli, puffed tofu and chopped duck blood cubes. Add salt and continue cooking for about 2 minutes before turning off the heat. 4. Pour the cooked duck blood soup into a soup bowl, sprinkle with chopped coriander and chopped green onions, add white pepper powder and white vinegar, and mix well when eating.

Tips: Duck blood is very tender, so cooking duck blood requires careful control of the heat and cannot be too long. If you cook it for too long, a large number of pores will appear in the duck blood and the duck blood will become old. If the time is too short, blood will still be produced inside.

Boil the duck blood in duck soup, take it out and put it on the vermicelli, add duck liver, duck heart, duck intestines, pour the hot duck soup on it, sprinkle with seasoning, pepper and coriander.

The key to making sweet potato vermicelli is to use transparent and strong fine vermicelli.
