1. Remove the scales, gills and internal organs of the longevity fish, and make sure to scrape and clean the black film inside the belly. Cut the ginger into shreds, smash and chop the garlic, and cut the green onion into small sections.

2. Make a few cuts on the fish body to make it easier to season. Apply salt all over the fish body and marinate for about 10 minutes.

3. Put oil in the pot and preheat it. Make sure the fire is very hot. Dry the fish, fry in oil until golden.

4. Turn over and continue frying the other side until golden brown.

5. Add water (the water should cover 1/2 of the fish body). Bring to a boil over high heat, cover the pot, and simmer over medium-low heat for 3 minutes.

6. Add light soy sauce, salt, garlic and ginger.

7. Add the scallion.

8. Add the green onion leaves and cook over high heat until the sauce thickens.

9. Serve on a plate.
