How to roll the dough

Many people may think that cooking is a difficult task. In fact, it is not difficult to make delicious dishes with color, fragrance and taste. You just need to master the methods and techniques. The method of rolling dough is very simple and does not require many cooking skills. It is suitable for regular consumption.

1. Weigh 150 grams of flour and 150 grams of corn starch.

2. Mix the flour and starch, add a spoonful of salt and about 250 grams of water, and stir into a thin paste. The ratio is basically 1:1:1.7.

3. Pass the thin paste through a fine sieve to filter out the small lumps.

4. Apply a thin layer of oil on the flat pan.

5. Scoop in a large spoonful of batter and adjust the thickness according to your own preference.

6. Put it into a pot of boiling water.

7. Cover the pot and steam over high heat for two minutes. You can adjust the thickness and increase or decrease the steaming time as needed.

8. Open the lid of the pot and see if the dough starts to bubble, which means it is cooked.

9. Then take it out and place it in a basin filled with plenty of cold water.

10. After the dough has cooled, apply a thin layer of oil on it.

11. Use chopsticks to lift it up from the edge.

12. A sheet of dough is ready.

13. Use the same method to make the batter.

14. Roll up the dough and cut it into strips.

15. Cut the cucumber into shreds and set aside.

16. Boil celery and mung bean sprouts and set aside

17. Cut the gluten into pieces and set aside. You can buy the gluten or wash it yourself.

18. Put chili powder, crushed pepper and sesame seeds in a bowl.

19. Heat a wok, add onion, ginger, dried chili peppers and Sichuan peppercorns and fry until fragrant.

20. When the oil temperature drops to about six or seven layers of hot, pour it into the pepper bowl.

21. Put the dough and vegetables in a large bowl, add vinegar, light soy sauce, salt, a little sugar, a little chicken essence, then add the diluted sesame paste, and then add the chili oil and mix well.

22. Mix well and serve.
