How to make grilled green onion fish

1. Wash the green mullet and drain the water.

2. Cut into small pieces. I used scissors to cut it.

3. Pour a small amount of oil into the pan, dip the fish in flour, tap off the excess flour, then fry over medium-low heat.

4. After frying until golden brown, turn off the heat and remove from the heat to drain the oil.

5. Mix a bowl of water and starch for later use. Then add 3 tablespoons of cooking wine, 1 tablespoon of soy sauce, half a spoon of chicken essence, 1 teaspoon of salt, and half a spoon of sugar into an empty bowl to make sauce. (No water is used in this dish, so more cooking wine is needed)

6. Cut a large handful of green onions into large pieces and set aside.

7. Leave a small amount of oil in the pan, add the chopped green onion and fry over low heat.

8. Place the fried fish on top of the scallion whites and cover the fish with the excess scallion greens. Pour the sauce prepared in the green bowl on top. Reduce the heat to medium-low, cover the pot, and simmer for about 3 minutes. Do not open the lid midway.

9. After 3 minutes, when the soup is almost cooked, pour in the water starch, cover the pot again and simmer for a while, then turn off the heat and serve.
