How to make brine-curd dried tofu

3.12 Cut the tofu into evenly thick slices

4.21 Cover the cutting board with baking paper and place the tofu on it

5. Take a container that can hold a cutting board, put a steaming rack or an upside-down bowl in the middle (the container is used to collect the water when the tofu is out of water)

6. Place the tofu plate on the steaming rack (bowl)

7.12 Sprinkle a little salt on the surface of tofu

8.21 Press down a flat plate that can cover all the tofu slices (I used a baking tray)

9. Put a heavy object on the top. Don’t put too much weight at the beginning. After about 2 hours, double the weight. Press for more than 5 hours in total. The longer you press, the more water the tofu will release and the tougher it will taste.

10. Put the pressed tofu on the grill, brush a layer of oil on the surface, bake in the oven at 180 degrees, middle layer, for about 20 minutes, take it out, turn it over, brush oil on the other side, and bake for another 20 minutes

11. The baked tofu has a golden crispy skin on the surface

12. Put all the marinade ingredients except ginger, onion and seasoning into the gauze bag

13. Pour all the seasoning sauce into the pot, add appropriate amount of water, and put in the marinade bag

14. Add ginger slices and green onions

15. Finally, add the roasted tofu, bring to a boil over high heat, then turn to low heat and cook until the flavor is absorbed. Turn off the heat and let the soup cool down.

16. Brush the surface of the braised tofu with oil and bake at 180 degrees for 20 minutes on each side

17. Take out and cool

18. It is very good for cooking, cold dishes, or as a snack. The skin is chewy and the inside is tasty and juicy.

19. Finished product
