How to make dumplings stuffed with chives and eggs

1. Put the flour and water into the bread machine.

2.1 Cover the dough with a damp cloth and let it rest for 10 minutes.

3.2 Knead the dough for 20 minutes and stop the machine when it becomes a smooth dough.

4.1 Wash the chives and cut them into small pieces, the finer the better.

5.2 Pour more oil into the pan, add the beaten eggs after it is hot, stir-fry until the eggs solidify and turn off the heat. Then use a spatula to break up the larger egg pieces and let them cool for later use.

6.1 Roll the dough into a slightly thin strip, then roll it left and right to cut into pieces of equal size. Roll left and right to separate the pieces and prevent them from sticking together.

7.2 After the eggs have cooled completely, mix them with the chives and set aside. Remember not to add salt first. Add salt and mix after the dough is rolled.

8.1 Spread the dumpling wrapper flat on the palm of your hand and add an appropriate amount of the stuffing you just mixed.

9.2 Sprinkle dry flour on the small dough pieces, flatten them one by one, and then roll them in circles to make dumpling skins that are thick in the middle and thin around the edges.

10. Place the dumpling wrapper at the base of your thumb and let it fold naturally.

11. Use the fold-on-fold method to pinch the dumpling skin from one side, and focus on the back piece to make a crescent-shaped dumpling.

12. After the dumpling skin is completely glued together, pinch the edge repeatedly back and forth so that it will not open no matter how long it is cooked.

13. After each dumpling is wrapped, place them in the tray in order with some space between them. Sprinkle a layer of dry flour on the tray in advance to prevent sticking.

14. Put clean water in the pot, put in the dumplings after it boils, cover and cook over high heat.

15. Turn off the heat when the water boils again and remove the chives from the pot quickly to keep the chive filling fresh and tender.
