1.Blanched spareribs.

2. The main seasonings of clove spare ribs: red yeast rice, rock sugar, cloves, fermented bean curd juice, nutmeg, onion and ginger.

3. Put a little oil in the wok, add the blanched shrimp and fry on low heat.

4. Fry until both sides are slightly yellow, add scallion segments and ginger slices and stir-fry until fragrant.

5. Add water to cover the ribs.

7. Add the packaged red yeast rice, cloves, nutmeg, fermented bean curd juice, rock sugar, dark soy sauce and cooking wine.

8. After adding all the seasonings, bring to a boil over high heat, then simmer over medium-low heat for about 40 minutes.

9. After stewing for 40 minutes, pick out the seasoning.

10. Turn on high heat and cook until all the soup is reduced.

11. Remove from heat when the soup is gone and sprinkle with sesame seeds.
