1. Slice the eggplant and soak it in salt and white vinegar water for ten minutes.

3. Boil water in a pot and steam the eggplants. (This time I used two different steaming methods, one with a lid and one without a lid. The result was that the color of the one without a lid was more beautiful than that of the one with a lid.)

4. When steaming the eggplant, chop the chili pepper, garlic and shallot into fine pieces, put them into a bowl, add salt, sugar, light soy sauce, white vinegar and pepper powder and mix well. In another pot, heat cooking oil until it smokes and pour it into the seasoning bowl.

5. Pour off excess water from the steamed eggplant and tear it into thin strips after it cools down a little.

6. Pour the seasoning in step 4 over the eggplant strips.
