1. Use a small bucket to rinse it with water, put in the loach, and use a small amount of ginger and cooking oil to make it spit out the mud.

2. You must have a sieve with a handle at home so that you won’t burn your hands. Pour the required loaches into the sieve.

3. Important step: After the water boils, open the lid with your right hand, quickly pour the loach into the pot with your left hand, cover the lid and press it tightly (be careful of the boiling water splashing at this time)

4. Generally, boil for 30 seconds to remove the mucus on the loach, take it out, rinse it with water, and fry it in a pan. This way, the loach will not have a fishy smell.

5. Prepare the rennet tofu

6. Put the fried loach into a large bowl, add some shredded ginger and boil it with water.

7. Cook over high heat for 10 minutes, then add tofu and simmer over medium heat.

8. After 8 minutes, the soup turns milky white and is ready to eat.
