How to make Shachima

1. Sift the high-gluten flour, add the eggs and stir by hand (do not add all the eggs at once, add two at a time)

2.12 Knead the dough into a ball again, cover it with a damp cloth and let it relax for 2 hours

3.21 Take out the relaxed dough, put it on the table and sprinkle a little hand flour

4.1 Roll each dough into a dough sheet about 3mm thick, and finally cut the dough into thin strips about 7-8cm in length.

5.2 Divide the dough into two

6.1 Take a clean pot and pour in an appropriate amount of salad oil (about 300g)

7.2 After cutting all the noodles, sprinkle some flour on them to prevent them from sticking together.

8.1 Fry the noodles on low heat until golden brown, drain and set aside

9.2 Heat the oil pan until it is 60-70% hot (you can put a small dough in it, if the dough has small bubbles, it is ok), put the cut strips in, and spread them with a spatula

10. Put granulated sugar, maltose and water into a clean pot at the same time

11. Cook over medium-low heat until syrup is ready for use

12. Add about 20g of salad oil to the wok.

13. Mix fried noodles, raisins and black sesame seeds

14. Pour the boiled syrup into the wok and mix quickly.

15. Take a baking tray and line it with baking paper or brush it with a layer of oil.

16. Pour all the mixed ingredients into the baking tray, and then use a spatula or a small hammer to flatten the noodles.

17. Wait until it is completely solidified and then take it out and cut it into the size you need with a knife.
