Tomato and Egg Dumpling Soup

In addition to noodles, wontons, and dumplings in the north, another common pasta dish is dumpling soup, which is also a very simple food made with flour. Materials

Dice two medium-sized tomatoes and finely chop the green onions.

After the pan is hot, pour in slightly less oil than that used for cooking. After the oil is hot, add chopped green onion and stir-fry until fragrant.

After the onion aroma comes out, add the tomato cubes and stir-fry for half a minute.

Add appropriate amount of tomato sauce, salt and sugar, stir-fry over medium heat until red oil appears and the tomato pieces gradually decrease.

Add half a pot of water and bring to a boil over high heat.

While waiting for the water to boil, add water to the prepared flour and stir it little by little with chopsticks. Add a little water at a time and continue adding water until there is no water left. Continue adding water until all the flour is in small particles of uniform size and there is no dry flour.

After the water in the pot boils, continue to maintain high heat and add small dough balls in batches.

Use chopsticks to stir the dough quickly each time it comes together, spreading it out in the pot so that it doesn't stick.

After the water boils again, turn to medium-low heat. When the dough balls are cooked, turn to low heat. Pour the beaten eggs into the pot in circles, but do not stir first.

After the eggs are slightly solidified, stir gently with chopsticks and add your favorite vegetables. Just drizzle some sesame oil before serving.

Tips

1. Tomatoes can be peeled in advance and fed to the elderly and children.

2. Tomato sauce is added to increase the sweet and sour taste. It can be omitted if the tomatoes themselves are flavorful enough.

3. Be sure to stir-fry the tomatoes for a while longer, until almost no lumps can be seen.

4. For flour, you can use ordinary medium-gluten flour or enriched flour, or you can use whole-wheat flour that does not contain gluten; the amount of flour and water can be increased or decreased according to personal needs.

5. Vegetables can be selected from rapeseed, Chinese cabbage, etc., or they can be omitted.

6. It is best not to omit the sesame oil before serving.

7. The dough balls must be of the same size. If they are too big, they will not be easy to cook and will affect the taste.
