1. Put peanut kernels into a cold pan with cold oil, fry them on low heat until they are 80% cooked, and keep stirring with a spatula to prevent them from getting burnt. Place on a plate and let cool, allowing the residual heat of the peanut kernels to fully cook.

2. Wash the cucumber, smash it with a knife and cut it into sections.

3. Chop the garlic into minced pieces, cut the red pepper into small pieces, chop the coriander, and prepare the Sichuan peppercorns.

4. Add one tablespoon of sesame oil to the remaining oil for frying the peanuts, heat it, add Sichuan peppercorns and diced red peppers and stir-fry until fragrant. Remove the Sichuan peppercorns and diced red peppers after the pan is cooked.

5. Add the heated oil into a bowl with minced garlic and coriander. Then add soy sauce, sugar, salt and balsamic vinegar in turn. If you like a spicier taste, add a teaspoon of red oil and a teaspoon of pepper oil.

6. Mix the sauce evenly and pour it on the cucumber. Stir evenly and put it in the refrigerator to marinate for about 15 minutes.

7. Before serving, mix the crispy fried peanuts into the cucumber.
