How to fry pork till tender

4. Boil water

Before stir-frying the meat slices, blanch them in boiling water first. Take them out as soon as the meat changes color. This way the frying time will be shorter and the meat will taste more tender.

5. Heat the pan with oil

Heat more oil in a hot pan, then immediately add the marinated meat slices and stir-fry over high heat. This way, the meat will not stick to the pan.

6. Add some cold water when frying meat

Stir-fry the meat slices until they change color, then add a few drops of cold water to let the oil fry for a while, then add seasoning and continue stir-frying. The fried meat slices will taste just right.

7. Add vinegar

Add a few drops of vinegar before serving, and the taste of the meat will be very different.

8. Don’t add salt too early

When stir-frying meat, it is better to add salt late than early. Adding salt late shortens the effect time of salt on the meat slices and reduces the amount of dehydration of the meat slices (dehydration is the main reason for the aging of meat).
