How to make elegant swan puff

1. Prepare the materials. Stay calm even when busy.

2. Weigh the low-gluten flour, sift it and set aside. It doesn’t matter if you add a little more or less, just use your own control.

3. Beat three eggs using a manual egg beater.

4. Stir the butter, water, sugar and salt, heat until boiling, turn off the heat, immediately sift in the low-gluten flour, mix well, quickly, and don't cook the flour. Stir until there is no dry powder.

5. While the batter is still hot, add the previously stirred egg liquid, quickly pour in most of it to lower the temperature of the batter, and then mix well with a spatula. Here I would like to remind you not to pour all the egg liquid in, but add it in batches to avoid the batter being too wet.

6. Add the egg liquid in batches, stir evenly, and then add the remaining egg liquid until it becomes a puff batter that can fall freely like a ribbon. The puff batter is better to be dry than watery. If it is dry, you can beat an egg and add it little by little.

7. Preheat the oven to 180-190 degrees for 5 minutes when making the puff batter.

8. Put the puff paste into a piping bag and a round-hole piping nozzle, and squeeze out the puff paste into a water drop shape. There is no special technique for squeezing the water drops, just do it as you like. I forgot to take a photo of the water-drop batter, please forgive me. I made two plates in total. This plate of round batter will have some small hooks when you squeeze it. It doesn’t matter. A perfectionist can use the back of a spoon to dip some of the remaining egg liquid to smooth the round batter. If you don’t care about appearance but only about taste, you can ignore this step.

9. Put it in the oven, 190 degrees, middle layer, for 35 minutes. Adjust the time and temperature appropriately depending on your own oven. As time goes by, your kitchen is already filled with fragrance. Ding Dong, the time is up. Don't be too excited at this time, control your emotions. You can stay in front of the oven for 10 minutes and admire the puffs inside. They are browned and plump, so cute! Ok, 10 minutes are up, open the door. Wow, the fragrance assaults your nostrils again. Take it out and let it cool for a while. Don’t be impatient to put it in your mouth, be careful of the burns. Is the appearance ok?

10. Sifting powdered sugar will make it more beautiful!

11. Cut the teardrop-shaped puff skin in half and use the bottom to make the lower body of the swan.

12. Cut the upper part into two halves to make wings.

13. Swans have long necks, don’t they? This will require your painting skills to be demonstrated. Squeeze out 2.180 degrees on the baking tray and bake for 5 minutes. If you bake it too long, it will become a roasted duck neck. I forgot to take a picture (I always forget to take the most important picture, I don’t know if it’s intentional)

15. Make whatever filling you want. The filling I make is whipped cream and white sugar until 80% cooked. Poke a hole in the bottom of the puff with chopsticks and squeeze in the filling with a piping nozzle. Well, give it to the one you love most!
