How to make Wenzhou noodles

1. Add vinegar, soy sauce, MSG and sugar to the garlic and set aside. Cut the meat into pieces and set aside.

2. Add boiling water to the pot, add salt and bring to a boil over high heat. Use plenty of water to blanch bean sprouts and rapeseed for two minutes, then remove from the heat.

3. Put the noodles in a pot and cook. Bring to a boil over high heat, then turn to low heat and cook for five minutes. Rinse with cold water and remove from the pot.

4. Fry the eggs until they are skinned, cut into strips and set aside

5. Heat the oil, add the fat and salt, then add the lean meat, heat on high heat for one minute, pour the noodles into the pot, pour in the vinegar juice, stir evenly, turn off the medium heat, add the bean sprouts and rapeseed, mix well, pour into a plate, and put the egg skin on top.
