How to make eggplant and egg dumplings

Eggplant and egg dumplings is a dish that many people like. You don’t need to prepare too many ingredients when making this dish. Simple ingredients can create an extraordinary delicacy. The family sits together and eats this delicious dish. Happiness is as simple as this dish, full of the taste of home and very memorable.

1. First, add water to the dumpling flour and knead it into a dough of moderate hardness.

2. After kneading the dough, add sugar and knead the dough twice

3. Prepare the dumpling filling: cut off the top of the eggplant and wash it; wash the shallots, onions and eggs

4. Put a little more oil in the pot than usual, add the aniseed, bay leaves, and peppercorns. When you see the seasoning change color and smoke coming out of the pot, turn off the heat, put the dumplings in an empty pot to cool, and take out the seasoning.

5. Heat some oil and fry the eggs.

6. Don’t fry it too much, serve and let it cool

7. Cut the eggplant into thin strips, put each cut portion into a bowl, and sprinkle salt immediately to prevent the eggplant from changing color.

15. Take a portion of the dough and roll it into strips. Sprinkle some flour to prevent sticking. Then cut it into equal-sized pieces while turning.

18. Then pull both ears inward and pinch them tightly.

19. Put your index fingers on the palms, thumb to thumb, and push your hands inwards with a little force.

22. Boil water in a pot, add dumplings and cook until done.
