Cooking Steps

Step 1: Peel and wash the potatoes, cut into cubes, add starch, and soak in clean water; slice the ginger and cut the green onion into sections.

Step 2: Wash the beef, cut it into chunks against the grain, blanch it in boiling water to remove the blood and odor, then drain and set aside. (The beef does not have to be washed, it is also good to soak it directly in oil. Of course, different people have different preferences. Because beef is easy to cook tough, it is difficult for beginners to get started. The heat and stir-frying time must be controlled very accurately to eat tender beef. Of course, if you want to eat stewed beef, it is another matter.)

Heat a pot with potatoes and beef, add appropriate amount of oil, sauté ginger slices and scallions, add beef cubes and stir-fry for a few times, add 1 tablespoon of dark soy sauce, 1 tablespoon of cooking wine, and half a tablespoon of vinegar, stir-fry over high heat until it changes color.

Step 4:

Pour 1.5 bowls of water into the pot, add star anise, cinnamon and bay leaves, cover and bring to a boil over high heat then simmer over low heat for 50 minutes.

Then pour in the potato cubes and stir together with the beef, cover and simmer over low heat for another 30 minutes.

Step 5:

Turn on high heat to reduce the sauce, add appropriate amount of starch when the soup in the pot becomes thick, add a tablespoon of salt, a little sugar and MSG for seasoning, sprinkle some chopped green onions and serve.
