   Wash the spinach, blanch it, and remove it from the water.

   Squeeze out excess water and cut into small pieces

   Beat the eggs with a pinch of salt.

   Boil some water in a pot, add cooking oil, pour in the beaten eggs and let them set. Use chopsticks to break them up, then add pepper, salt, and oyster sauce.
