How to make tea-flavored crispy chicken

1. Wash the young chicken (don't use the chicken feet and internal organs), brew tea with boiling water, wash the ginger and green onion and set aside

2. Heat a pan over the lowest heat, add pepper and salt and fry slowly.

4. Take 1 scallion and a piece of ginger and rub them evenly on the chicken (to remove the fishy smell)

5. Take an appropriate amount of the fried pepper salt and spread it evenly on all parts of the chicken. You can use a little more to make it more flavorful (I used up half of the pepper salt)

6. Squeeze half of the tea leaves with your hands to remove excess water, and rub them evenly on all parts of the chicken body. Leave it for 30 minutes to let the flavor absorb.

7. Finally, stuff the remaining ginger and 3 knotted scallions into the chicken.

8. Pour cold water into the steamer, bring to a boil and then steam over medium-low heat for 20-25 minutes until cooked.

9. You can use chopsticks to test the chicken. If it can be easily inserted, it means the chicken is cooked.

10. Carefully remove all the seasonings from the chicken and shake off the water for later use.

11. Pour enough oil into the pot

12. Heat until 60% to 70% hot, keep the fire high and put the chicken in for frying (be careful of oil splashing in this step, you can use the pot lid to slightly cover it)

13. Turn over and fry the other side when one side is golden brown, and use a spoon to scoop up oil and pour it on the chicken that is not fried.

14. Take out the fried chicken when both sides are golden brown.

15. Squeeze out the remaining half of the tea leaves and fry them in the heated oil for about 10 seconds.

16. Take out and sprinkle on the chicken
