1. Cut the beef into pieces, not too small, 1-1.5 cm pieces are fine

3. Bring the water to a boil and then add the beef cubes. After boiling, remove the blood foam. Take out the meat, put it in a small pot, add bay leaves, Sichuan peppercorns, Sichuan peppercorns, star anise (about five, not more), a cinnamon stick (not more), up to ten dried chilies, rock sugar, sprinkle a little pepper, a spoonful of salt, a spoonful of cooking wine and soy sauce, and three spoonfuls of light soy sauce. Then mix well while hot, and put it in the refrigerator for half an hour to let the flavor absorb.

4. Take out the mixed meat and stir-fry it in a pan for ten minutes. Sunflower oil is best. At this time, use another pot to boil some water and add angelica, red dates and wolfberries. After the water boils, put the fried meat into the pot (preferably a large casserole). Cook over medium heat for ten minutes at first.

5. Then simmer on low heat for one hour. Add diced carrots, the same size as the meat. Mix well and simmer for another hour and a half. Then add halved garlic and simmer for ten minutes. Add scallion segments and use whole onions. Add salt to taste and cook over high heat for 10 minutes until the sauce thickens. The juice should not be too little, you can pour it on the rice and eat it!
