2. Heat the pan over high heat and pour in twice as much oil as you normally would for cooking. When the oil is 80% hot, add the minced ginger and stir-fry until fragrant. Then add the eggplant shreds and stir-fry for a few times. Let the oil cover the eggplant shreds.

3. When the eggplant is covered with oil and is about to wilt, add dried red pepper, green pepper shreds, 2 teaspoons of oyster sauce and 1 teaspoon of barbecue sauce. Stir fry a few more times.

4. At this time, the eggplant is basically cooked. Add chopped green onion and minced garlic and stir-fry again for a few times. Add salt and MSG according to personal taste before serving. I put 2 teaspoons of oyster sauce and 1 teaspoon of BBQ sauce and it was tasty enough, so I only added a little MSG to enhance the flavor.
