Change to another pot, put the chicken pieces and mushrooms into the pot, discard the fried oil, add water, scallion segments, winter melon, garlic, tie the scallions into a knot, cut the ginger into slices, put appropriate amount of water in the pot, add scallions, ginger and blanched chicken pieces.

6. After boiling over high heat, turn to medium-low heat and cook for about one and a half hours. Add sliced ​​winter melon and appropriate amount of salt and continue to cook for more than 10 minutes.

7. After stewing, add salt and white pepper before serving. Tip: Do not add salt in advance. Be sure to add salt when you are ready to serve, so that the chicken soup will be very fresh.
