Required Materials

Preparation method

1. Soak the dried abalone in cold water for two days, then soak it in warm water until it swells slightly, then wash it clean, use 3000 grams of soup, add a little orange-red pigment and food powder, and cook for about two hours, then take it out;

2. Boil ham, lean pork, pig skin, old chicken, and chicken feet, then clean them; wash and chop ginger and shallots, fry them together with shallots in a pan until dry and fragrant, then remove them and place them in a bamboo basket;

3. Place bamboo chopsticks at the bottom of a stainless steel bucket, put in a bamboo mesh, then put in ham, lean pork, chicken feet, pig skin and abalone, add the remaining two soups, bring to a boil over high heat, add oyster sauce, Huadiao wine and appropriate amounts of rock sugar, maltose, dark soy sauce and chicken powder, cover with a lid, and simmer over low heat for 8 to 10 hours. When the abalone is fully soaked, remove it, drain the soup (about 8 kg left at this time), and filter it with gauze to get the abalone juice. Pour the abalone sauce into a container, let it cool, cover it and store it in the refrigerator for use at any time.

Usage

It can be used to pickle noodles, pour over rice or stir-fry seasonal vegetables. It tastes rich and fresh, and has a unique flavor. Abalone sauce dishes are usually used by high-end restaurants to entertain distinguished guests. The sauce is made with abalone meat, and then the abalone juice is used to cook dishes.
