How to make puff pastry

1. Soak the mung beans for at least 3 hours in advance. I soaked them for an afternoon (it is best to buy peeled mung beans)

2. Dice the pork and prepare the minced meat. I used lean meat and chopped ginger.

3. Season the minced pork with salt, sesame oil, sugar, light soy sauce, dark soy sauce and five-spice powder and marinate the minced pork and refrigerate

4. Mung bean cake: add the mung beans soaked for an afternoon into water and cook in a pressure cooker until soft.

5. Turn on the bean cooking function

6. Start kneading the leather materials

7. Add sugar lard into flour and mix well with a spatula (the lard must be softened first)

8. Slowly add warm water to moderate wetness

9. Use your hands to rub like clothes

10. Knead until the dough is smooth (I kneaded it for about ten minutes. Don’t be lazy at this step)

11. To make the pastry, just knead the lard and flour evenly.

12. Wrap the kneaded dough with plastic wrap and let it rest for 15 minutes. Put the water-oil dough in the room and the oil-oil dough in the refrigerator.

13. Mung Bean Soup is Ready

14. Heat a spoonful of corn oil in a frying pan

15. Pour in the mung bean paste and add sugar and fry until the water is removed

16. Serve and let cool completely

17. Take out the flour that has risen and knead it into long strips on the board (remember to put flour on the board to prevent sticking)

18. Use a knife to cut the water-oil dough into 12 pieces and set aside

19. Cut the pastry into 12 equal portions

20. Cut the dough and start the next step

21. Flatten the dough and put in a piece of oil puff pastry.

22. Place it in the tiger's mouth and make sure to seal it tightly.

23. Wrap all 12 doughs with plastic wrap and let them rest for 15 minutes

24. Flatten the dough on the board

25. Use a rolling pin to roll into a cow tongue shape

26. Roll it up from the top and turn it 90 degrees.

27. Repeat this process again and roll up 12 pieces of beef tongue. Finally, let the dough rest for 10 minutes.

29. Wrap the dough and flatten it with the open side facing up and the smooth side facing down (you can also use a rolling pin)

30. Wrap the meat filling in the same way as above.

31. This is mung bean filling

32. Wrap it and flatten it slightly with the mouth facing down. Remember to flatten the middle slightly and make it lower than the surrounding area (because the middle will bulge when baking).

33. Put all in the baking tray and preheat the oven to 180 degrees

34. Sprinkle white sesame seeds on the surface

35. Bake at 180 degrees for 10 minutes

36. Take it out after 10 minutes and it has swelled up (the puff pastry is successful). Now bake the other side for another 10 minutes

37. It’s so crispy when it comes out of the oven
