11. This is the color after frying for the second time with higher heat. My fire was too high and the oil was too wet, so it started smoking, and some of it was burnt. Remember to control the heat. I have already mentioned why you fry it twice.

12. This is after frying. You can see that it has three layers. The outer layer is obviously crispy, the second layer is soft and is the eggplant, and the middle is the chicken filling. I regret not using chicken and not frying it in oil.
