How to make delicious home-cooked chicken intestines

1. Slice the green onion, ginger and garlic, cut the dried chili and green garlic into sections, cut the hot pepper into pieces, chop the chicken into pieces, marinate with base sauce and fry in oil. Cut the pork intestines into pieces and remove the oil and fishy smell. Add oil to the pan, add bean sprouts, green garlic and chili peppers, stir-fry until cooked and serve to line the bottom of a bowl. In another pan, add oil, add Pixian bean paste, angelica, green onion, ginger and garlic, add soup, add chicken and pork intestines, season and adjust the color, cook until done, pour into a bowl, sprinkle with dried chilies and Sichuan peppercorns, pour hot oil and chopped green onions.

2. Wash the purchased pig intestines several times with vinegar to remove excess grease, and put them into the pot to blanch. Cut the intestines into pieces and set aside. Cut the chicken into pieces and blanch it in a pot. Wash it with clean water, drain and set aside. Cut abalone mushroom into strips. Dice potatoes. Chop the bamboo shoots into pieces. Prepare the seasoning. Heat the pan with cold oil, heat the oil to 80%, add all the seasonings and stir-fry over low heat. When the seasoning starts to smell fragrant, add the red bean paste and stir-fry over low heat until the red oil comes out. Add the pig intestines and stir-fry quickly over high heat. Stir-fry until the intestines start to bubble and become twice as large as before, then add the chicken and stir-fry. When the chicken is slightly charred, add all the side dishes and a little dark soy sauce for color. Add water to cover the ingredients, bring to a boil over high heat, then simmer over low heat for 15 to 20 minutes. Remove from heat, add green onions to a bowl and enjoy!

3.Cook the chicken and set aside. Cook the pig intestines and set aside. Put water in the pot and add the hot pot base. After boiling, add the bamboo shoots, and then add the cooked pig intestines and chicken. Cook for half an hour to let the flavors soak in, then add the garlic and continue cooking for 10 minutes. Shake it and it’s ready to serve. It tastes very good!
