1. Take two chicken racks, cut them into large pieces with kitchen shears, rinse them with clean water and soak them for half an hour. Put half a pot of water in the pot, put in the chicken rack, skim off the foam after the water boils, pour in two spoons of cooking wine, some scallions, ginger slices, and a spoon of salt, and cook over medium heat for ten minutes.

2. After cooking, take out and rinse with hot water. Change to a wok, pour in a little oil, pour in two spoons of cumin seeds and stir-fry over low heat. When the cumin color becomes darker, add appropriate amount of chopped green onion, minced ginger, cumin powder, black hushu powder, and sesame seeds. Stir-fry for about half a minute until the aroma is strong. Then pour in the chicken rack pieces, sprinkle with half a spoon of salt, a spoon of soy sauce, a spoon of cooking wine, a spoon of sugar, and a small half bowl of boiling water. Stir well, cover and cook for about five minutes

3. Add a little water starch, bring to a boil over high heat to collect the sauce, pour in the water starch twice to thicken, add a few drops of oil, stir-fry evenly, and serve. You can also put some lettuce leaves on the plate for decoration.
