1.Xiyang Braised Pork Head

There is a legend about Xiyang braised pork head: It is said that there was a famous chef in Lu'an Prefecture in ancient times, and his ancestors all had the skill of making pork head. Once, a young man asked him to learn how to cook braised pork head. Due to carelessness, he forgot to add soy sauce during the cooking process. When he was discovered, the pork head was already cooked to about 70% done. What to do? At this time, the famous chef hurriedly asked him to take out the pig's head and rinse it with cold water to try to remedy the situation. Since there was really no other way, they just left it alone. As a result, the next morning, they were surprised to find that the soaked pig's head looked white, felt soft and smelled fragrant. Then they quickly took a piece, cut it into slices, mixed it with mashed garlic, and tasted it. Both of them praised it highly. From then on, they started this business, and the braised pig's head gradually became famous. After continuous improvement, it has now become a delicious dish deeply loved by Woyang people.

2. Yimen Zhuangmo

The shape of the Guokui resembles ancient armor, round and hard, so it is also called Guokui. The method of making Zhuangmo is actually very simple. First, take a large piece of dough and knead it repeatedly to make it into a large round cake, about the size of a washbasin, one to two feet in diameter, and about an inch thick. Then, stick a layer of sesame seeds on the surface and put it on a flat pan and cook it over low heat. After it comes out of the pan, it is crispy on the outside and soft on the inside and smells particularly fragrant. Some people are more skilled at this and can even create some patterns on the outer skin.

3. Dry buckle surface

The favorite specialty snack of Woyang people is neither the crispy pot stickers nor the steaming hot dumplings, but the dry noodles that have been popular in the small city of Woyang in the past decade. Dry noodles are made by laying out cooked bean sprouts, with garlic juice, chopped green onions, MSG, pepper, vinegar, sesame oil, soy sauce, etc. as the base. The cooked noodles are then covered on top and finally topped with oil-pressed chili peppers. After thoroughly stirring, it can be eaten. Nowadays, dry noodles have become an indispensable part of the diet of Woyang people.

4. Sprinkle soup

Satang is a special breakfast in Woyang, Anhui. It uses old hens, pork chops and other ingredients. After stewing, beat the raw eggs in a bowl, stir them evenly, and then pour boiling broth over them to make yellow-orange broth egg drop tea. Legend has it that when Emperor Qianlong visited the south of the Yangtze River, he praised Sa Tang highly, making it famous. Over time, Sa Tang became a famous snack in Woyang with a unique flavor.
