How to make dumplings with shrimp, leek and pork

1. Add a little salt to warm water and dilute it, then knead the dough. Cover the dough and let it rest (to make it chewier and not too hard)

2. Cut half a green onion and 3 slices of ginger into small pieces and set aside

3. Wash and drain the chives, chop them into small pieces and set aside

4. Wash the fresh shrimps and put them in the refrigerator for 20 minutes. Remove them (the shrimp skin is easy to remove after freezing). Peel and chop them into small pieces for later use.

5. Buy ready-made minced meat (to save time) and set aside

6. Add 300g of chopped shrimp, some salt, some pepper powder, half a chopped green onion, 3 slices of ginger, and some seafood soy sauce to the meat filling (do not add oil at this time) and stir in one direction.

7. Finally, pour soybean oil into the prepared filling and mix well.

8. Add the chopped chives into the meat filling and mix well

9. Take out a piece of dough, knead it into a flat round shape, make a hole in the middle and tear it into a long strip and place it on the panel. Press your hands on the long strip and rub it back and forth until it is thin.

10. Cut into pieces about 2.5 cm in size, and rub the skin (pull, press, and rub the skin)

11. Take a dumpling wrapper and add the fillings. (If the shrimps are not chopped finely, put one shrimp in each dumpling.)

12. Arrange the wrapped dumplings on the lid (the dumplings on this curtain were made by my husband, and I rolled the skins. Haha, a friend saw the photo of the dumplings on the front page and said they looked like they were bought in a supermarket. I made those dumplings, and I learned how to make them from Shandong from my mother. I have always admired my mother's craftsmanship, so I only made 10 for the photo.)

13. Boil water in a pot, put the dumplings in when the water boils, push them gently in one direction with a spoon while putting them in, cover the pot and simmer. Pour a little cold water after the water boils, pour a little cold water again after the water boils again, pour a little cold water again after the water boils for the third time, take out the dumplings after the water boils for the fourth time and press the dumplings. If they swell up immediately after pressing, they are cooked (if they do not swell up after pressing, they are not cooked). You can turn off the heat and take out the dumplings immediately.

14. You can adjust the sauce according to your own taste (I add a little vinegar and a drop of sesame oil). It is fresh, fragrant and delicious.

15. Arrange the dishes as shown above
