1. Jiangyin

Jiangyin City, abbreviated as Cheng, is named after its location "on the bank of the river". It is a riverside port garden city. Jiangyin is located in eastern China, in the southern part of Jiangsu Province, and at the northern end of the Taihu Plain in the Yangtze River Delta. It borders Zhangjiagang to the east, Wuxi to the south, Changzhou to the west and Jingjiang to the north. Jiangyin is located at the end of the river and the beginning of the sea, at the throat of the Yangtze River. It has been a river defense fortress throughout the ages. It is an important transportation hub between the north and south of the river and a natural port city for river-sea transport.

Jiangyin City has a long history and rich culture. It was established in 1736. The north of the mountain and the south of the water is Yin, and Jiangyin represents the south of the Yangtze River. Jiangyin culture belongs to Wu Yue culture, and Jiangyin people belong to the Jiangsu and Zhejiang ethnic group and speak Wu language. Jiangyin puffer fish: Jiangyin is the first place to eat puffer fish, and there has been a saying since ancient times that "people would risk their lives to eat puffer fish". "The people of Wu love puffer fish" from "Mengxi Bitan" in the Song Dynasty. The Song Dynasty's "Brocade in the Sleeve" begins with "The best in the world: Jianshu, imperial wine, Duan inkstone... Jiangyin County pufferfish..." Su Shi once lived in Changzhou Prefecture, and there is a legend about him eating puffer fish. The Ming Dynasty's "Jiajing Jiangyin County Chronicle" is the earliest local chronicle that mentions pufferfish. In the 1950s, due to frequent accidents involving eating puffer fish, only the roasted puffer fish in Jiangyin could be sold in the lower reaches of the Yangtze River. In the 1990s, chefs from other cities went to Jiangyin to learn the skills of cooking puffer fish. Later, pufferfish were farmed on a large scale and the toxins were greatly reduced. Jiangyin is known as the "Hometown of Chinese Puffer Fish Cuisine". In 2009, "Jiangyin Puffer Fish" successfully applied for the country's only puffer fish geographical indication certification trademark.
