1. Jiangyin

The Ming Dynasty's "Jiajing Jiangyin County Chronicle" is the earliest local chronicle that mentions pufferfish. In the 1950s, due to frequent accidents involving eating puffer fish, only the roasted puffer fish in Jiangyin could be sold in the lower reaches of the Yangtze River. In the 1990s, chefs from other cities went to Jiangyin to learn the skills of cooking puffer fish. Later, pufferfish were farmed on a large scale and the toxins were greatly reduced.
