How to make spicy and sour chicken nuggets

1. Wash fresh chicken gizzards and remove the grease on the surface.

2. Cut and set aside.

3. Take out the homemade sour beans from the jar and soak them in water for a quarter of an hour (to avoid them being too salty). Wash the small red peppers and set aside.

4. Cut the sour beans and small red peppers into shorter pieces; chop the garlic into small pieces, and chop the perilla; chop the ginger into small pieces and set aside. (I cut the ginger later, so I didn’t take a separate photo of it)

5. Boil the cut chicken gizzards in boiling water to remove any unpleasant smell.

6. Wash and drain for later use.

7. When the oil is hot, add chopped ginger and garlic and stir-fry until fragrant, then pour in the sour beans and chili segments and stir-fry quickly.

8. After stir-frying for a while, pour in the chicken gizzards and continue to stir-fry evenly.

9. Add a small amount of soy sauce (soy sauce is dark in color, so I only put a little to enhance the flavor), an appropriate amount of cooking wine, a small amount of pepper, and an appropriate amount of salt (sour beans contain salt, so don't put too much); stir-fry quickly for a dozen seconds.

10. Add perilla and chicken essence, stir well and serve.
