How to make spicy fried beef noodles

1. Cut the beef into thin slices and marinate with cooking wine, soy sauce, sugar, black pepper, starch and a little oil. Remove the heads and tails of the mung bean sprouts, cut the onions into strips, and mince the green onions, ginger and garlic.

2. Cover the fresh beef noodles with plastic wrap and put them in the microwave for 1-2 minutes until the noodles become soft, then carefully tear them into strips.

3. Heat the pan and oil to sauté the minced ginger until fragrant. Pour in the marinated beef and stir-fry over high heat until the beef changes color. Serve immediately.

4. Heat the pan and oil to sauté the minced ginger, scallion, garlic and onion until fragrant. Add the mung bean sprouts and stir-fry until the sprouts are 80% cooked. Add the beef and mix well. Serve.

5. Heat the pan and oil, pour in the rice noodles and shake them with chopsticks. Mix 1 spoon of dark soy sauce, 2 spoons of light soy sauce, half a spoon of oyster sauce and half a spoon of sugar into a sauce and add it to the rice noodles twice. Stir well.

6. Finally, pour in the pre-fried side dishes, mix well with chopsticks, and sprinkle with chopped green onions.
