Ingredients preparation

Main ingredients: 1000g of bone-in lamb loin meat.

Seasoning: 25g coriander, 25g green onion, 15g shredded ginger, 10g minced garlic, 1g aniseed, 1g Sichuan pepper, 1g cinnamon, 1g fennel

Cooking Lamb

1g pepper, 60g vinegar, 5g Shaoxing wine, 1g MSG, 5g salt, 1g sesame oil, 50g chili oil.

Production steps

1. Chop the lamb loin meat into two-inch long and five-centimeter wide pieces and wash them with water. Remove the roots of the coriander, wash and disinfect, and cut into 2 cm long pieces. Cut three qian of green onion into one-inch long segments, and mince two qian of green onion;

2. Chop the green onion, garlic and coriander. Soy sauce, MSG, pepper, sesame oil, chili oil, etc. are made into seasoning sauce;

3. Pour two pounds of clean water into the pot, put the mutton in and bring to a boil over high heat, skim off the foam, take out the meat and wash it. Next, change to three pounds of water and bring it to a boil, then add the mutton, aniseed, peppercorns, fennel, cinnamon, scallion segments, ginger slices, Shaoxing wine and salt. When the soup boils again, cover the pot and cook over low heat until the meat is tender. Take out the meat, put it on a plate, and eat with the sauce.
