How to make delicious dried shrimps

Dried dried shrimp is an ingredient often used in cooking. This kind of dried shrimp has a very strong seafood flavor. Whether it is made into soup or stir-fried, the taste is very delicious and unique. There are many ways to cook dried shrimps, and their nutritional value is very high. Different cooking methods have different flavors, and they can also be used to entertain guests without looking too shabby. So how do you make dried shrimps delicious?

1. Red wine braised dried shrimp

Soak the dried shrimps in water and cooking wine. It is best if the soaking time is longer, as this will help the dried shrimps to fully expand. If time is tight, soak for at least two hours. Clean the soaked dried shrimps and remove the whiskers and heads. Heat oil in a pan, fry the shrimps over low heat, and remove from the pan when they turn golden brown. Finally, add oil, onion, ginger, garlic, dried peppercorns, dried chili segments, tomato sauce, and hot and sour sauce, stir-fry briefly over high heat, add dried shrimp, pour in red wine and water to slightly cover the shrimp, add sugar, turn to low heat, and cover and simmer.

When the soup becomes less, add chicken stock and stir-fry over high heat. Remove the shrimps and place them on a plate. Then add the soup, pour the soup on the shrimps and sprinkle with chopped green onions to make delicious braised dried shrimps. Note that the dried shrimps should be soaked for a while longer, until they are soft. The frying time should not be too long, otherwise it will burn and affect the taste. The soup should be thicker.

2. Slightly spicy preserved radish and shrimp

Boil the preserved radish in light salt water, soak it in cold water for 10 to 15 minutes, and then cut it into small pieces. Remove the seeds from the chili pepper and chop it finely with a knife. Heat oil in a pan, add dried shrimps and stir-fry over low heat until you can smell the aroma. Then add the preserved radish pieces and stir-fry until you can smell the aroma of the preserved radish. Then add half a small bowl of water and half a teaspoon of sugar and stir-fry. Continue to stir-fry until it is 80% dry, add the red pepper and stir-fry on low heat for three or two minutes, then add a little sesame oil and stir-fry evenly.

3. Shrimp and Egg Dishes

Soak dried shrimps in cold water until soft, drain and cut into small pieces. Chop the western-style ham slices into small pieces. Smash the garlic and mince. Add salt to egg whites and beat until foamy. Add 1 tsp. 5 ml. of oil to a wok and heat over high heat until 70% hot. Pour in the whipped egg whites and fry until they become cotton-like. Serve. Add the remaining oil (1 teaspoon, 5ml) to the wok, heat over high heat until 50% hot, add minced garlic and chopped dried shrimps, sauté until fragrant, then add minced ham and chopped green onions, stir-fry evenly, serve, and sprinkle on the fried egg whites.
